There appears to be several issue related to settler defense assignments to vanilla defense post and artillery.
I can assign one settler to a defense post with the "Max Defense per Settler set to 6. Which should equate to 3 defense post. if you have more that 3 defense post the system will continue assignments until all defense post and any artillery positions are assigned to the one settler. Seems similar to the previous issue related to food assignments. Also if you assign a settler to an artillery position and there are any open/unoccupied guard post the settler will patrol around between the guard post and not properly man the artillery position.
screenshots show artillery post unoccupied, with the settler standing at a regular guard post instead. This is especially bad at the Castle, where I have to recruit enough settlers to occupy all guard post positions.
